Thanks for this recipe Mary! I have an 11lb. (Bulk purchase great deal) Block of vegan chocolate. It should get the job done.
Any tips for making the coconut whipped cream? I never seem to be able to do it consistently and convincingly. I've tried different brands, using the solids in coconut milk, coconut cream, and other things. Always seems to separate.

I have an awful tasting olive oil that tastes like butter when salt is added, so would that work for the fat in that sponge cake?
Man, due to this paranormal activity I always have a few bar of dark chocolate for monthly emergencies. It's running low because my last dentist visit found a cavity. I've finished up the last bar. Need to stock up now. :')
instead of coconut creamer you could use vegan cream cheese (more traditional) or silken tofu whipped with soy yogurt to mimick mascarpone ✨
Sugar comes from sugarcane…and that grows in the ground like spinach does so really this is like a super healthy veggie cake with fruit because coconut. So it does not matter that I was attempting for the 30,000th time to stay away from sweets lol because this is incredible and so is Mary.
