    Coffee sponge cake
    5 eggs
    135 g sugar
    80 g AP flour
    35 g cornstarch
    160 g coffee
    160 g espresso coffee

    Cream
    500 g mascarpone
    130 g Egg yolk + 12 g sugar
    130 g egg white + 35 g sugar
    90 g amaretto or kahlua
    ½ tsp Salt
    Cocoa powder

    Sponge
    Whisk eggs and sugar until fluffy and sift in the remaining dry ingredients.
    Bake at 200 c for 7-9 min.
    Leave to cool and dry

    Cream
    Brush the coffee cakes with the coffees mixed with 45 gr of amaretto.
    Mix mascarpone with 45 g of amaretto and a pinch of salt
    Whisk the yolk with the sugar until fluffy.
    Whisk the eggwhites until 3⁄4 of the way and add the sugar and finish whisking.
    Add the yolks to the mascarpone and then the whites, fold together carefully.
    Add a cake in the bottom, pour in most of the cream, add another layer and repeat.

    I love tiramisu because it's actually quite easy to make. A super beginner friendly dessert that also doesn't require tons of cleanup after. I use ladyfingers instead of baking a sponge cake tho.
