I love making mine with soft tofu too! I use the Nongshim Soon Veggie (the kimchi is best, but only the cup version is vegan-friendly) and Mori-nu soft tofu. I agree that adding extra gochugaru is best 🌶❤ I'l add some onion and such next time like yours.
There are also vegan versions of spam available now! I don't eat it, but for anyone who misses spam, know it's available!
