Maybe coffee mixed with some chia seeds or ground chia, some sweetener, and whipped heavy cream (sweetened, with vanilla) might be nice. Perhaps a bit of cocoa powder? Cinnamon? You got this, girls!
Ok i tjonn you have to take youre 90 second bread for a ladyfinger, cover it with allulose and then adf the original components loke mascarpone.i think that'll work.
Have You tried making salami chips? By a thin sliced salami in different flavors. Put them in the oven on grill for a few minutes and let them cool down on a pice of tissue paper, it becomes super crispy and delicious 🤤

Coffee jelly is one of my favorites growing up in Japan! I'll even soak chia in coffee over night. For tiramisu, I use the Keto biscuit mix in butter flavor by NuTrail. Each biscuit has 3g carb and I only need one to make Tiramisu or even strawberry shortcake! ( only for me, hubby is high carb WFPB) I add allulose and vanilla. A bag makes 16 biscuits so it lasts me a while.

For me, I would mix the coffee & cream then add the gelatin!
Maybe break the rice cakes into the bowl and add the coffee to the smaller pieces. Then cover with yogurt, etc….

What about putting the cream into the dessert before the coffee is refrigerated, just like a congealed dessert salad?
For the tiramisu; have you considered cooling the coffee first before you dip the rice cakes in, so you can get more coffee flavor???

Sarah is ON POINT with the first one. Use real Mascarpone and try the same otherwise. I think the low carb yogurt really "changed" the idea.

Yummmmm. Coffee jelly! I have actually made this. I use allulose simple syrup. So very delish. I put choc-zero chocolate curls on top for fanciness.

I think you can use the “Wonder Bread” Chaffle recipe for the Tiramisu but let it dry out before dipping in cold coffee.
