I put soy milk in the ramen since I feel it goes with the whole miso flavour plus some roasted squash or pumpkin!
I use a bit of coconut milk and/or coconut cream as substitutes for milk. Great texture and we enjoy the extra coconut dimension.

I'm curious. You say to put the cashews in MILK in the blender thing you've got. Did you mean water? If not, what milk are you using? I assumed you were making cashew milk but now I'm not sure.
