    If you rinse the freshly cut wedges in cold water then par boil for 2 mins, plunge into cold water immediately after, then follow the instructions for drying and cooking as you've said, you can eliminate the 30 mins ice water wait. 😉

    Try this, everything the same, then take thick cut bacon, stretch it, wrap the bacon around the wedges, dont cover the whole wedge, bake,
    Bacon will take just a little longer, oops use a tooth pick to pin the bacon onto the wedge.

    No they arent crispy! The best way to do is Rinse potato wedges thoroughly in running water. microwave the potato wedges in salt water until half done, take them out and dry thoroughly. Sprinkle some baking powder and cornstarch. Double fry them and toss in salt , pepper ,paparika and garlic powder. Adding salt in the beginning releases water from the potatoes making them soggy
