Maaaahvelous! I love red lentils. But I had to tweak it: added a half tsp of coriander. I can't have cumin without coriander! Oh, and I used the roasted garlic flavored BTB bouillon base. Mmm-MMM

Looked very good! If you make this again, try this: leave out the tomato paste, add a tablespoon (yes!) of Italian seasoning, and a teaspoon or two of balsamic vinegar at the end. Oh! And try adding torn spinach after the soup is done! Mmm
But I LOVE cumin and my name is WENDY! hahahah! We are making this today. Gonna rain all day here in central Alabama. Cannot wait to chow.

The reason that the recipe calls for salting it at the end is that the salt makes the lentils crunchy or hard. I've never really had that problem with red ones but I guess they can get that way?
Thank you so much for this recipe.! It is our favorite IP RECIPE! My husband likes it over brown rice with nutritional yeast sprinkles. I like mine garnished with avocado chunks. It is hard to find recipes that don’t require a lot of substitutions, due to my husband’s special diet. This one was perfect as written! Love it!

Jill, I've been watching you for some time, and you kept me thinking about the Instant Pot and I was finally sold! I pulled the trigger and got my Duo 6qt for a gift to myself from Santa. I love it! I actually hug it! Anyway, this recipe has been one of my favorites. I usually put twice the vegetables in. But this soup makes my family feel good, full of vegetables and warmth, and a really good use of red lentils. I've probably made this recipe four times now, in just a month! Really simple and easy, nutritious and delicious. Thanks for I-potifying this recipe!
I make this recipe alot. I use green lentils and I love "better than bouillon" veggie and I cut potatoes and carrots like stew cut and add zuchini. It seems to me that the kid wants beef stew.
This was first use of my new Instant Pot. Delicious. I used green lentils because that is what I had and added 5 minutes to the cooking time. Thanh’s for the great recipe.
You could use ground coriander in place of cumin for anyone who isn’t a fan.

A stew to me always has celery and most definitely pearl onions. I am not a big fan of lentils unless blended, so I would probably make as shown, blend that up, THEN add more tomatoes, steamed chunks of potatoes and carrots, plus sliced celery (maybe peppers, maybe mushrooms) and of course, those pearl onions. As for spices, my favorite go to is Worcester sauce, a bit of vinegar, maybe molasses, whole black peppercorns, and definitely a bay leaf, toss in a handful of fozen peas or cut frozen green beans, warm through and serve….Know what I mean? A traditional stew minus animal ptoducts and the oil. Jill, can you do this one up? I'm thinking it should turn out to be thick and chunky.

Hi Jill, I made this stew today and it was really awesomely good. I added half a carton of fresh mushrooms, and two stalks of celery and used a can of Muir Glen fire roasted whole tomatoes (the best) which I squeezed into the pot to kind of break them up. Then I added the broth. At the end I added some fresh kale that my husband brought home before dinner. I used yellow lentils because that is what I had on hand. The result was magic. Sooooo good. We both had two big bowls of stew and can't wait to dig into the left overs tomorrow. Thank you for the recipe. It will be repeated many times.
I made this last night. I used 2 sweet potatoes because that is what I had on hand. Also, for seasoning I added a TB of spike and a TB of gram masala. I didn't have any tomatoes so I just used veggie broth. I used golden lintels and added celery. I husband came home starving and ate three bowls. Big success. He ate it again tonight! Thanks Jill.

I made this for dinner tonight. My family loved it and my girls want to have it for lunch tomorrow. They are picky. I'm so very pleased. I increased the veg like you suggested, used 4 vegan stock cubes with the water, but only used 1/8 teaspoon of the spices as my young ones don't like spicy. I added 1 Tablespoon of cornflour and water mixture to thicken it to be more like stew.
Mom mom used to do that…caramelize tomato paste when she made pasta because it sweetens it….gets rid of the acidity.
