    I made 2 Pumpkin Cheesecakes on Thanksgiving and still have leftovers. The Instant Pot is legit good. I use the Fat Daddio’s 6-inch pan with removable base (wrapped with parchment paper), whack ginger snaps in a Ziplock with a rolling pin, and compress the crust mixture with the base of a solid glass cup. I like your idea with the different layers. I didn’t bother, but yours got style points! Thank you for sharing.
