    We made liquid smoke in my Grade 8 science class, roughly a hundred years ago. The process looked remarkably similar to your diagram: wood chips in the bottom of a test tube, Bunsen burner underneath, glass tube running up and then down into a trough of water, where distillate was collected in another test tube. The stuff we got was industrial strength — pitch black, vaguely oily, smelling powerfully of smoke. The notion of making a comestible flavouring that way seemed like mad scientist stuff.

    Also, I salute you for eating barbecued chicken bib-free in a brand new, gleaming white teeshirt. You could take that act to the street and put out a hat.

    I'm glad you did this one Adam cause I keep a bottle hidden in the back of the spice cabinet. Sometimes you just want to add a bit of flavor to something without setting up outside and waiting hours. 2 or 3 drops is enough to satisfy that urge without all the time and trouble. Oh and for anybody who hasnt experimented yet I find it to be one of those things to wait until just before serving to add. I am a bit concerned about the potential health effects of smoked foods so I only have it on rare occasions but there is something oh so good about meat cooked over an open wood fire. If you can use a cleaner artificial way to approximate that scent/aroma, great. You can even get most of the way there by just heating a pan and flashing off a few drops of liquid smoke to stank the place up in a good way without actually eating any of it.

    While liquid smoke will impart a smoky flavor, it's not the same as smoking a food. It might taste the same, but it wasn't made in a smoker, so it wasn't smoked. And, yes, I do use liquid smoke for the flavor.

    Take one cup liquid smoke mix it in a tall glass with 4oz of cheap vodka, take a large plastic bucket (set off to the side) now quickly drink the liquid smoke and vodka mixture, grab the bucket firmly with both hands and violently vomit in to it as needed

    Company in Wisconsin called Red Arrow has made liquid smoke for major food companies for decades. It is now part of the Kerry Group. When I worked there aprox. 30 yr ago, they produced it by heating sawdust and pulling the smoke through columns of circulating water; later they changed to a different process more like the distillation mentioned. If a product says "natural smoke flavor", it likely from them.

    I'll pass on the liquid smoke. But I also pass on most BBQ. I don't like the taste of most BBQ because they basically do what you are describing which is incomplete combustion and I thought that was what BBQ smoke flavor was until I tasted BBQ make using smoke from a clean fire from dry wood and the fire being well oxygenated and them controlling temp by controlling the amount of fuel and not the amount of air. Then add on top of that I started trying with different woods and found I really don't like the flavor of mesquite and hickory. The flavor of the smoke is going to vary a lot based on how well oxygenated the fire is how much water is in the wood and what wood you use, which is why purists care. There is something acrid and offputting from the smoke of a dirty fire and that same flavor is usually in liquid smoke.

    I like making a pot roast on my stove top and adding a teaspoon of liquid smoke to it. Gives it a unique taste especially if it's the middle of a cold Wisconsin winter and I don't want to fire up the Weber kettle… 😋

    I wish liquid smoke would go the way of the dodo, because that crap is disgusting and i'm tired of it being used to replace bacon flavour, it doesn't work.

    Please keep in mind gell-mann amnesia effect. we know that this guy is full of it when he talks about things we know, as a biochemist I still shudder when I think of the nonsense he spewed when talking about "sugars". He's also promoting injections that help people lose weight (provided that they modify their diet and exercise) and that you need to take for the rest of your life, despite exorbitant prices, that has no proper testing done on it, so, when he tells you that "liquid smoke" is just like real smoke, cause judge that isn't educated in chemistry said so, decades ago, and that it's even better, it probably means that it's actually far worse for you, even if you can't tell right away how or why, even if you really have an urge to believe him cause he's self deprecating handsome dude, with obvious charm, which is probably more of a psychopathy carefully curated into something more acceptable in today's society, autism spectrum disorder. let's be honest here, autist would tell you the truth, it takes psychopath to lie, and WE KNOW HE'S TYPICALLY LYING.

    So what are the odds he's telling the truth for the first time now?

    But i noticed, if it used too much is obnoxious, but traditional smoke is not, probably because using liquid smoke you can put too much, or something in that sense…

    Is the difference between this and methanol distillation just temperature?

    I don't think I've ever had real liquid smoke. I find the fake vinegar added stuff repulsive though, unfortunately. I don't smell or taste the smoke, just the vinegar and a sweetness.

    Liquid smoke definitely doesn’t taste as good as true low and slow smoke. I very much wish it did though. If I could get the same results with way less effort I’d be happy to do so.
