    Next time with the noodles-after letting the dough rest for at least 1/2 hour to 2 hours, run the dough through the widest setting fold it envelope style and run through rinse and repeat about 3 to 4 times. You will feel the change in the dough becoming more smooth/silky/chewy.
    Then slowly click it down to the thickness you want.(for ramen i like 3 ) Then let it rest before running it through the cutter.
    I love making noodles of all types and I have 2 manual pasta machines and one big set for my big stand mixer(best $200 I ever spent lol I was getting a Popeye muscle arm using the manual one).
    Also using a bit of kansu water(spelling here) give ramen noodles their slip/springy chew. I don't always have it on hand(or I'd give the proper spelling) and have used baked baking soda(bake regular baking soda at 400°f for about half hour to 45 minutes)in water to imitate the water.
    It turns the eggless noodles a beautiful gold color.
    But I too make an absolutely scary mess in the kitchen whilst creating my masterpieces lol 😆 totally worth it.

    I said it before and I’m gonna say it again… this women cannot cook and I don’t understand how she gets views and followers. She can only make instant ramen in a less lazy way lol. Just goes to show how lost this generation is and how social media has taken over our minds that we find anything interesting…
