    What a beautiful video Connie. ๐Ÿ˜‹ Although I call it Polenta for many years now, growing up to me this was called Mamaliga. An identical dish to polenta from Romania served in a variety of ways! Don't forget Romania was heavily influenced by the Romans! My husband (who is Italian) never really liked this growing up, and never developed a taste for it and does not eat this at all (poor thing โ˜บ๏ธ) but my kids love it! I love the use of the Kabocha squash and roasted garlic for this lovely autumn harvest dish. ๐Ÿ˜ I thought at first it was acorn squash! I don't know if I missed it, but how did you cook up the squash? Was it roasted? Bright Blessings for the rest of this Fall!!!

    So, is the regular cornmeal, polenta? Do you buy specific bag of polenta or can you use cornmeal? There are different grinds of cornmeal, can any of those be used? What about corn flour?

    This looks delicious!!!!! I have made polenta numerous times, but always thick, so that it can set, be cut into French fry size and quick fried, or I have made it thick also so that it can be broken into pieces and put into chili. I will have to try it like it is done in this recipe. Thank you again, Connie, for another great recipe.

    Amazing looking dish…. Thank you…. What kind of pepper was that you used? I thought it might be jalapeno but it looked round….. Also, to clarify the oil at the end that you used on the polenta and the plate was basil oil?

    I should have said this a long time ago, but you make artistically staging your food look so effortless! A beautiful plate has always been important to me I guess, and I never realized it til photographs of food got popular on the internet, and, I hate to say it, are mostly just awful, bless the folk who love to post them anyway!

    My Dad was a professional photographer, so I know that it is not as easy as it might seem to capture beautiful images of food, and you are really good at it.
