LENTIL SOUP (the best weight loss soup!)
Makes 4 servings – 315 calories per serving 63g carbs/16g protein/2g fat
Ingredients
1 cup red lentils (rinsed)
1 medium zucchini, chopped
3 medium carrots, chopped
2 cups cauliflower
1/2 medium white onion
1 lb of potatoes, cubed
6 cups water
1 tbsp curry powder
1/2 tbsp turmeric
Boullion cube or salt to taste

Add all of your ingredients into a large pot and bring to a boil. Cover and bring down to a simmer. Let the soup cook about 20 minutes or until the lentils are cooked then lightly blend with an immersion blender. You can add some black pepper and a squeeze of lemon juice before serving.

I made this today to the recipe except I used my homemade veggie broth. It was outstanding! I used to hate lentils, but the red ones have transformed me!!!β€
Instead of using chicken cubes. Best thing is to just use 200g of chicken

Its an Indian dish which has been around for centuries.
Another way to do this is to cook the lentils and hard vegetables in a pressure cooker to get them nice and soft. Then on the stove heat some oil and put in the aromatic things like ginger, garlic, spicy peppers, onions, and spices to really draw out the flavor. Combine the pressure cooker ingredients with the flavor oil ingredients then use the bullion to salt to taste. This method ensures that the lentils get fully soft. The flavors will also all infuse overnight in the fridge making great leftovers, but you can still eat it right away and have it be delicious. You can also replace the pressure cooker with another pot on the stove but it'll take longer.
