    Some extra notes on this recipe:
    – If the dough is still crumbly after pushing it down, instead of moving straight to the cutting step, let it rest while you do everything up until putting the pot into the oven. Right before you put the lid on, finish the cutting/frying step and then add to the pot. This will allow the gluten strands to form and for the dough to become one piece and easier to manage.
    -On the other hand, if your dough is too stiff and it springs back when you try to push it out, let it rest for an hour. Remember: resting seitan dough both (1)forms gluten strands and (2)relaxes the gluten strands. Kneading stiffens them. If resting isn't working, then just cut pieces off the dough. It should be fine as long as you got your gluten to hydration ratio correct as written.
    – You can prep the dough up to 24 hours before you plan on making the stew. Just make it on parchment and store it wrapped in the fridge until you're ready. Then pop it out for the cut/fry step.
    – If someone wants to experiment, I'd be interested in seeing if it is possible to fry the dough after pushing it down and THEN cut it into chunks. If it works, this would make the frying step a lot easier. Just be generous with the oil! Think shallow frying. I cut and then fry in the video as this allowed me to be able to shape the chunks as I didn't want oddly shaped pieces. I'd be curious to hear results if anyone tries this.

    Although it seems to take too long, the end result looks like it is worth trying it with a couple of modifications. But How will you digest those uncooked peas? Plus it was frozen before. People with digestive issues should be careful about such details

    I love that this recipe makes just enough seitan for this stew! It looks like a great meal. Stew and “buttered” dinner rolls. Yum! And leftovers ready to go to look forward too….perfect!

    cool that you’re making your own veggie broth! glad to have a recipe i trust, but unfortunately you won’t catch me dead making it unless i’m on vacation or something tbh; the stew itself looks awesome though, I’ll have to make the seitan this weekend!
