    I make Mayo using an almost identical recipe and,yes, it is delicious. However, I don’t use collagen and wonder why you do. Does this improve the recipe or is it just for a boost of collagen?

    Why flavor the mayo when making it? Restaurants just use oil and egg as a base….then you can flavor it however you want for different recipes. This recipe locks you into one flavor.
    Also, take your burger off the heat at 155F. The residual temp rises 5 degrees while it rests and you'll never risk overcooking the meat.

    I never have put in collagen. The oil is expensive enough. You can use lemon in place of vinegar. I use trader joes dijon mustard. i put the egg in second after the oil and then the other items. No fail. Homemade is so delicious and none of the crap.
