Fajita is literally Spanish for "Little Skirt". Skirt Steak = Fajita. Any other cut of meat =/= fajita. A lot of Americans use the term "fajita" loosely and apply it to things like chicken and shrimp. Those aren't beef skirt steak cuts. Fajita is a cut of beef, not a cooking style.
