I cooked this overnight and made a few changes. I didn't have shallots so I substituted onion, I didn't have lardons so I cut up a couple of rashers of bacon, Instead of wine and water, I just used 400ml of water, everything else was the same. It wasn't fully cooked after 7 hours so I went for a walk after breakfast and it was cooking for 10-11 hours. I expected it to be ruined but it ended up perfect, it was great! My slow cooker is the cheapest most ordinary model so might just be a little off with temperature but the meat was fully cooked without being massacred!! I'll probably brown the meat next time and see if it's any different, also I might cook on high for the first hour and then turn down and see if 7 or 8 hours will work. Thanks for the recipe!
Ideally marinade the beef in wine with onions, whole garlic and herbs like rosemary with whole black peppers over night. Never use a garlic press or puree, maybe chop a few garlic and put the rest in whole. Then a quick fry of the bacon and then sear the beef. Then put in cooker, add the wine, I would suggest more than this if you have enough to spare. Cook the rest of the vegetables in the leftover fat and add later. Try not to hurry, longer is better. Depending on your slow cooker of course. I put on high for an hour then turn it down, it takes about 6 at least depending on the amount. If want to be truly Gallic, hold back on the veg, use mushrooms & add a little brandy at the end. Serve with fresh baked bread. 😘
I did not see you add the wine. There should be one bottle of red wine added, correct?

I’m going to make this tomorrow to christen my new slow cooker. Does the fat on the bacon completely dissolve in a slow cooker over say six hours, or should I pre fry it before adding to the pot?

You need to brown the meat before to get more flavour. Bacon and beef then de glaze the pan and get that in the slow cooker it will be much better .

You CAN incorporate a few cooking techniques w slow cookers ya know? ie, browning the meat first, rendering the bacon, and on… And parsley and thyme, anything. Rating c+

Looks like a good beef stew, but the addition of garlic and tomato paste seems to me to deviate from the traditional recipe – but I’m not positive. It still looks great!
