This is the ONLY way my mother in law taught me to make enchiladas when I was 18 years old..I am now 68..what was once old is new again…She was from New Mexico and used the N.Mex chilis…I am from Sunny So. Calif and she brought her delicious ways of cooking into my kitchen. We do this both with the red & green sauce…it looks yummy. Keep up the good work Claudia..Ciao
