RECIPE (8 servings, 40min prep time): -2 carrots -1 onion -2 potatoes -2 cloves garlic Chop everything and fry in some oil for 3-4mins -2 Tsp cumin -1/2 Tsp chili powder -2 Tsp paprika -salt to taste -1 heaped Tbsp tomato paste Roast a 1-2 mins -1 cup (210g) red lentils -5 cups (1,25L) veg stock or water Simmer 30mins. Then blend until smooth and add more water or spices if needed. Serve with parsley and lemon juice.
This soup is even tastier when you brown a bit of pepper flakes and some dried mint. Personally i don't add cumin because that's not really traditional but you do you 🙂
I suggest green lentil soup also with orzo (dont have to put orzo in it but I think it pairs nicely) and oh I put 10% cream on top of this one like just a bit on top of my bowl…nom nom (but i guess it wouldn’t be vegan with cream)

Have u tried red lentils as filling for samboosa (somsoa)? It tastes really good. Idk where it originated from but I’m Arab and my mom would make them for me during Ramadan. Boil the red lentils until their soft ig (u don’t need the water if there is any left)
Then you can salute them w herbs and spices (whatever you want, we usually smash together parsley and garlic w those traditional smash thingys idk what it’s called in English n add it to a pan saluting it w a bit of oil then adding the lentils and spices)
Then you fill it into ur somsa pastry thing. You can either make it at home or buy it from the store. You can also do this with potatoes.
Everything is super in this recipe except using unwashed lentil 😁 u should always wash lentil before use bcz it has lots of dirt & dust in the process of field to packing. I will surely try this recipe 😀
