Can I use low fat milk? My son doesn't like whole milk so we never buy it.
My only questions is what level of heat should you melt the butter at?
When I was mixing the cheese in the milk, it was clumpy and not creamy, nor did it mix with the pasta. Is there a reason for this?

Truffle cheeses nd smoked cheeses are addicting but so good as Mac and cheese. Lidls has high quality macaroni from Italy at normal people prices. Sometimes they are out of elbows but other shapes work as well.

My modified version of this recipe is adding in 1 or 2 finely diced carolina reapers and using a little bit less creole to compensate. I know that sounds a little psychotic but it's actually a huge hit at every party I bring it to. All that dairy takes the reaper spice level down from unbearable to a surprisingly enjoyable heat. I'd have more trouble eating a whole raw jalapeno to put it into perspective.
