    And I made your waffle cake this morning and it was awesome.
    I only have regular monk fruit and will it make smooth creamy texture or do I need a different type of sugar for coating?

    I tried this cake and even halved your recipe. Used walnuts. It was delicious! I was able to cut the cake in half and make a double -layer frosting. It almost stayed in the oven too long at 29 minutes… one of the best keto cakes! Oh, I don't use swerve, but used 100% monkfruit by Julian Bakery.

    Thank so so much. I doubled the amounts, added one cup of dark brown sugar + 1/4 of the golden one and two slices of pineapple (chopped). It turned out super, just as the ones I make with wheat flour. The sweetness is definitely less since I lessened the sugar.

    I made this tonight but I made a few changes. I used Swerve brown sugar instead of the golden swerve because that is what I had. I also did not use cloves as I don't like them but I might try ground ginger next time. In the icing I added a little bit of almond milk to thin it down as I thought it was too thick. I also used a teaspoon of vanilla. And as I used erythritol confectioners and didn't want that cooling effect so I used a bit of liquid stevia with monk fruit to counter act it. This was amazing!! Absolutely delicious. I am going to try to freeze some of this and see how it fares. I will make this again for sure. Thank you so much!!
