Forget all those microwave shinnanigans!!! Buy a cheap 6 quart INSTANT POT and an Instant Pot glass lid. 1.5 to 2 hrs of doing NOTHING but ANYTHING else (other than running back and forth to the microwave every 10 min!, which seems nuts!). So EASY….Just drop in the steamer rack into the inner pot, add 1/4 cup of water, line instant pot with oiled parchment paper, drop in the kneaded dough, activate the Yogurt (low) function for optimal 37C temp, cover with glass lid and let that blob rise until it almost touches the lid. Drop the blob in the baking pan and bake it up. DONE!
Also, organic wheat bran works just as well as the oat bran but is MUCH LOWER in NET CARBS. Tastes like artisan whole wheat bread only 5 times better.
Could not find oat fiber, so could I use psyllium husk instead?

I appreciate that you use low carb flours for your baking because as long as you are able to maintain ketosis after eating it, I consider that Keto. The all nut flours just don’t cut it for some things and you take a very realistic and maintainable method of Keto-Low Carb which I appreciate. Have you ever considered making a lasagna using low carb tortillas as the noodle? This works out to 2.25g carb for the “noodle” and then a slight bit more for the low carb tomato sauce. Hi.. just a quick question.. is it necessary to wait for the yeast to create foam before using? Im using instant dry yeast.

@theketoking 2 things, your weights are off on your measurements. From the wheat gluten on down. I tried them and if you go by the grams, it's not equaling out to the ounces. I'm on my second loaf, and I'm not getting no where near the rise you and Diedra get. You guys must be performing some hocus pocus or something…

Has anyone tried a double batch? I did this morning, putting the dough in a higher wider pan. It's still in the microwave and I am a little worried that it will rise too much
