My recipe is very similar, but I layer things a bit more. In a separate pan from the meat I sauté the onions first, then the garlic, and then I add carrots & celery until they get a little caramelized. Then that pan gets dumped into the main pot with the meat & potatoes, etc. Oh, and I dump in a can of V-8 juice because why not?

this reminds me of moms stew. without the barley and oregano. for soup I think I would cut the meat, potatoes, carrots and celery much smaller.
