    You should know that Olive Oil has a very low burn point, much lower than traditional cooking oils. It will burn if it is cooked this long with garlic as shown. Once burnt, from being a healthy oil it becomes a very unhealthy oil. Burnt olive oil is bad for human consumption. Olive oil is best consumed unheated. It can be added to baba ganoush at the end unheated.

    In Syrian cuisine, this is not Baba Ganoush, but Muttabal. And you are missing the yoghurt, which adds extra creaminess to the dish. Baba Ganoush has some extra ingredients and it is more chewy like, as pertains to salads. It is definitely not a dip – just sayin'. 😉

    Chef.. nice video but don't agree with your recipe . Garlic confit and the roasting are always delightful ..No offense but the cooked flesh of eggplant 🍆🍆 is chopped not pureed .
