Can anyone enlighten me on the flavors of the Pasilla and New Mexico chili’s? A lot of recipes I’ve read and watched use guajillo Chili’s, just curious on the flavors of each kind so that when I try making my first pot of menudo I can know which chili’s I wanna use or mix. With how often I think of menudo I need to just teach myself lol
