I was told that Japanese has been getting increasingly "polluted" by the introduction of English words and terms but didn't realize how pervasive it has become since the last time I was in Japan. The Japanese I speak is not only regional, Bishū (western Honshu), but also Meiji Era, middle to late 19th century. It is nevertheless somewhat shocking to hear Kotani-san say "volcano" rather than "kazan." Regardless, loved watching both chefs produce noodles from flour and water.
