Hey Evan – I'm trying to figure out the scaling of the recipe and the water in the chili puree part doesn't make sense in this context. I'm guessing you used to cook the chilis with excess water separately from the spices and then you combined it back in but left some of the soaking liquid behind. It's unclear what % water to actually add to the puree / spice mix? I'm trying to scale the whole thing down to 3lbs of meat.
For us SoCal people this is like Tommy's chili minus the masa!

I myself have went far and beyond putting smoke to foods that no one would ever think of doing. Maybe more so than you. It becomes some kind of weird addiction, it's kind of hard to explain.
