    I am in Wisconsin, the land of tomato based chili with beans, very chunky served over cooked elbow macaroni. Your chili is not just from a different state, it from a different world. The only way I’ll get it around here is to make it myself. Thanks for the tutorial and ingredient list.

    Hey Evan – I'm trying to figure out the scaling of the recipe and the water in the chili puree part doesn't make sense in this context. I'm guessing you used to cook the chilis with excess water separately from the spices and then you combined it back in but left some of the soaking liquid behind. It's unclear what % water to actually add to the puree / spice mix? I'm trying to scale the whole thing down to 3lbs of meat.

    Awesome Video man. I agree no beans in the chilli. I'd love to see a pop up here in Las Vegas. No body does beef cheeks or the foil boat. And I'm sure that Frito pie would rock out here.

    "culturally identifying Texan" then I hope you have a gun on your hip lol. With that being said as far as barbecue goes I love you guys. I myself have went far and beyond putting smoke to foods that no one would ever think of doing. Maybe more so than you. It becomes some kind of weird addiction, it's kind of hard to explain.
