Sichuan Spicy Chicken Hot Pot (Chinese Style Cooking Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

Ingredients:
700g Chicken Portions
1 Green Pepper
1 Red Pepper
2 Spring Onions
1cm Ginger
1 Star Anise
1 Cinnamon Stick
3 Bay Leaves
5 – 8 Dried Red Chillies
1 Tbsp Red Peppercorns
1 Tbsp Ground White Pepper
2 Tbsp Cooking Wine (Rice Wine)
2 Tbsp Sugar
2 Tbsp Dark Soy Sauce
2 Tbsp Tomato Puree
1 Tbsp Lemon Juice
Salt to Taste

Method:
1. Slice the spring onions and thinly slice ginger.
2. Cut peppers into bite-size pieces.
3. Chop chicken portions into bite-size chunks using a meat cleaver.
4. Boil 2 litres of water in a large saucepan.
5. Add rice wine and then chicken into the pan.
6. Boil for 2 minutes and then remove from pan.
7. Heat 2 Tbsp oil in the wok.
8. Add star anise, cinnamon, bay leaves, red chillies, red peppercorn, spring onion and ginger. Fry for 10 seconds.
9. Add chicken to the wok and stir-fry for 3 minutes.
10.Add soy sauce, sugar and stir-fry for further 5 minutes.
11.Add 500ml of boiled water into the wok and bring to the boil – ensure the water level is just covering the chicken.
12.Add tomato puree, lemon juice and stir.
13.Cover the wok, turn heat to low and cook for 20 minutes.
14.Add the green and red pepper, salt, ground white pepper and stir.
15.Transfer to a dish and serve.

Yes made in instant pot and so darn good you could cut with a fork.. Here are the ingredients and instructions below’
1 1/14 pounds boneless spare ribs
1 (8oz0 tomato sauce
1 c beef broth
1/2 c sweet’n sour sauce
1 t garlic powder
1 t papkika
1 t onion powder
1 t lemon pepper
Make sure you pressure vale is closed..
Hit the meat/stew button
It will light up 36 minutes then go out and three beeps it start to steam..
once it has reached steam timer will read 36 minutes takes about 10 minutes to reach steam..
once done it beeps and then you release steam and if you want to keep it warm it will read LO and a number … That is what I did I was waiting on Ray…

I have been getting a LOT of requests for gluten free recipes- so here you go! This Instant Pot Teriyaki Chicken is so easy to make.

You can use Gluten Free sauce or normal Teriyaki Sauce. You can also us normal rice instead of Cauliflower rice.

Ingredients I used:
Costo Frozen Vegetables
Costco Cauliflower Rice
Costco Chicken
Gluten Free Teriyaki Sauce

Cooke the Veggies for 1 minute in your instant pot. Cook the cauliflower rice per package instructions.

This recipe is perfect if you are a beginner or if you have been cooking in your Instant Pot for years.
So beginners, don’t be afraid! ha ha.

Just remember when using the Instant Pot, it takes 10-20 minutes to pressurize!

An American grandma’s take on traditional English Christmas pudding. Here’s my recipe: Place about 1-1/2 to 2 cups of chopped dried fruit (apricots, cranberries, blueberries, raisins, dried oranges, candied ginger) in a bowl and cover with boiling water. Soak for about 20 minutes. While the fruit soaks, combine in your food processor bowl: 1 cup flour, 1/4 cup plain bread crumbs, 1-1/2 stick of cold butter (cut into 1-inch pieces), 3 teaspoons baking powder, 1 teaspoon cinnamon, 1 cup raw sugar. If you did not add candied ginger to your fruit mixture, add some ginger powder too. Pulse a few times to mix well. Add four large eggs, 1 or 2 tablespoons of maple syrup and 2 tablespoons bourbon. Pulse again ’til mixed well. Pour into a medium bowl. Drain your fruit and add to the batter, stirring well. Add 1/2 cup chopped pecans.

Butter a 5-cup heat-proof bowl. Construct a sling with aluminum foil to get your bowl easily in and out of your pressure cooker. Place your steamer trivet into the pressure cooker inner pot, and add two cups water to the pot. Lower your pudding on the sling to rest on the trivet. Fold the foil down as needed. Put the lid on the pot, set to VENTING, and hit SAUTE. Once steam starts coming through the vent, let steam for 30 minutes.

After 30 minutes, turn the Instant Pot off. Remove the lid carefully, tilting so no water drips on the pudding. Add more water as needed to your pot (a couple more cups) and then put the lid back on. Set valve to SEALING and set on MANUAL (or PRESSURE COOK, HIGH) to pressure cook for 35 minutes.

When pressure cooking is done, use a natural release for up to 30 minutes. Remove the lid, use oven mitts to carefully remove the pudding (using your aluminum sling) and let the bowl rest on a wire rack. Insert a toothpick to test for doneness– if it comes out clean the pudding is done.

Let pudding cool completely, then place parchment paper over the top of the bowl and wrap the entire bowl in foil. Refrigerate until ready to serve (a week or more).

To serve, run a butter knife along the inside of the bowl to loosen the pudding, then invert onto a small plate. Construct another aluminum sling and put that under your plate. Put your steamer trivet into your Instant Pot liner in your Pot and add a cup of water. Lower plate with the pudding into the pot. Secure the lid. Set valve to VENTING and hit SAUTE button. Let the pudding steam for 20 minutes, until heated through. Lift the plate from the pot using your aluminum sling.

Serve with whipped cream or bourbon sauce (or both). To make bourbon sauce, combine 1/4 cup bourbon, 1/2 cup brown sugar and 1/4 cup butter in a saucepan. Heat over medium heat about five minutes, stirring occasionally.
