I’m finally back with a new video. This is one of my favorite Filipino dish. Pork sinigang is such a comfort food to eat during cold months. Best eaten with a cup (or two or three, no judging!) of white rice. Yum!!

INSTANT POT PORK SINIGANG (SINIGANG NA BABOY)
Ingredients:
2 tablespoons olive oil
1 large onion, sliced
3 tomatoes, roughly chopped
3 lbs pork shoulder (pork kasim)*, cut into 2 inch chunks
4-6 cups of water
2-3 tbps soy sauce or 3-4 tbsps fish sauce
1 pack Mama Sita’s Sinigang Mix (hot and spicy)
1 large eggplant, cut into 2 inch chunks
1 pound kale, washed and large stem pieces removed
Optional ingredients:
10 pcs okra, ends trimmed
2 small pcs taro, peeled and cut into chunks
1 medium piece radish, peeled and sliced into rounds
Instructions:
1. Turn on the Instant Pot and press the Saute button. Let the pot get hot before adding the oil.
2. Once the oil is hot, add the sliced onions and tomatoes. Stir and cook until the tomatoes are soft and the onions are translucent about 5 minutes
3. Add the pork. Cook until the pork is has browned. If necessary, brown the pork in batches.
4. Add the soy sauce/fish sauce to the browned pork. Mix until all the pork pieces have been covered in soy sauce/fish sauce.
5. Add water to pot until all the pork pieces are covered (about 2-3 cups of water).**
6. Close the lid of the Instant Pot. Adjust the vent to Seal. Press the Meat button and cook the pork for 30-35 minutes.
7. Once timer beeps, do a Quick Release of the vent. Then open the lid.
8. Add about 2 more cups of water to the pot. Then press the Cancel button, then the Saute button.
9. Add the Sinigang Mix (you can use other brands of Sinigang Mix other than Mama Sita’s). Season to taste. Start with half the contents of the pack then add more if you want.
10. Add the chunks of eggplant (and okra if you choose to add them), and cook for about 5 minutes.
11. Turn off the Instant Pot once the eggplant chunks are cooked to your doneness.
12. Add the kale (or spinach) to the pot and close the lid. They will cook in the soup’s residual heat.
13. Your sinigang is ready by now. Enjoy it with a cup of rice!
* You can also use pork country ribs or pork spare ribs if you don’t mind the bones.
** If you choose to add radish and taro pieces to your sinigang, add them to the pot after the pork chunks are browned.

Tinola is my go-to chicken recipe when I want something quick – especially when my chicken is still frozen! The combination of ginger, chicken, and fish sauce create a simple, yet flavor-packed chicken soup.
In the Philippines, we usually use moringa (we call it “malunggay” in Tagalog) instead of bok choy. Although we usually use chayote and bok choy, feel free to use other vegetables in your Filipino chicken tinola.
If you don’t have access to an Asian market, spinach and other neutral-tasting leafy vegetables would work just as well. If you absolutely want a substitute for chayote, you can use zucchini.
