인스턴트팟을 이용해서 만들어 본 쌀밥입니다. 이 곳에서는 흔히 Sushi Rice / Japanese Rice / Sticky Rice 라고 불리는 쌀로 만든 밥인데 사실 우리가 더 많이 먹을텐데 아쉽네요.

자포니카 쌀(japonica-)은 쌀의 품종 중 하나의 명칭으로,
모양새가 둥글고 굵은 단중립형 쌀로 분류된다. 자포니카 쌀은 한반도, 일본, 중국 북부에서만 주로 소비가 되며,
전 세계에서 생산되는 쌀 중 10% 가량이 자포니카 쌀이다. 나머지 90%는 인디카 쌀이다.
자포니카 쌀은 다른 주요 쌀 품종인 인디카(indica-)에 비해 짧고 둥글다.
쌀은 기본적으로 90%이상 전분으로 구성되는데, 자포니카 종은 전분 중 아미로스라는 성분이 인디카에 비해 낮기 때문에
인디카에 비해 더 찰지며, 윤기가 더 난다. 무게는 품종에 따라 다소 차이는 존재하나,
인디카는 낱알 1천개의 무게가 25g 전후인 반면, 자포니카는 19-23g 가량이다.(위키백과, 우리 모두의 백과사전.)
Japonica rice (O. sativa subsp. japonica), sometimes called sinica rice,
is one of the two major domestic varieties of Asian rice.
Japonica rice is extensively cultivated and consumed in China, Japan, Korea,
whereas in most other regions Indica rice [ja] is the dominant type of rice.
Japonica rice grains are rounder, thicker, and harder, compared to longer, thinner, and fluffier Indica rice grains.
Japonica rice is also stickier due to the higher content of amylopectin,
whereas Indica rice starch consists of less amylopectin and more amylose.

Mak Kimchi (Makes 3 gallon, cuz that’s how much I need!)
Ingredients
For the Cabbage
6 lb napa cabbage
3 cups Korean kimchi sea salt or flaky sea salt
3 cup water
For the Kimchi Paste
3 cups water
4 oz dired pollack
2 sheets of palm size dried kelp
1/4 cup sweet rice flour
3 cups gochugaru, Korean red pepper flakes
1 cup good quality fish sauce
3 tbsp saewoojeot, Korean slated & fermented shrimp (you can substitute to fermented shrimp paste)
1/4 cup maesilaeg, Korean preserved plum extract (you can substitute to apple or apricot jam)
18 to 24 garlic cloves, chopped
1 tbsp chopped ginger
3 tbsp sugar
1 1/2 tbsp salt
For the Filling Vegetables
2 lb Korean radish, julienne
8 to 10 green onions, cut in halves lengthwise if it’s thick then cut into 1-inch long pieces
1 bunch of Korean mustard, cut into 1-inch long pieces (approximately 4 cups)
1 bunch Korean or garlic chives cut into 1-inch long pieces (approximately 2 cups)

Sometimes it takes longer than I hoped to come up with a new recipe which is solely my own, I hope you could understand that.
I would like to introduce you to a very simple way to make a Vietnamese rice noodle, Pho, which is perfect for this kind of season with a chillness in the air. I also included a recipe to make rice noodles yourself simply, so please stay with me till the end. (I highly recommend to watch till the end!)

It’s spicy, so flavorful, and delicious Korean Spicy Beef Radish Soup! It’s perfect for a cold weather, like raining or snowing day with your cozy socks on and eat this soup! It’s so easy to make, you should give it a try!

♥ Korean Spicy Beef Radish Soup ♥
Ingredients
1 Tablespoon sesame oil
2 Tablespoons Gochugaru (Korean red flakes)
4 thick green onions, separated white part (chopped) and green part(1 inch long sliced)
3 cloves garlic, chopped
1/2 lb. beef chuck or sirloin, cut into 1 inch squares, 1/4 inch thick
7 cups water
2 cups white radish (Mu / Daikon), peeled, cut into1 inch squares, 1/4 inch thick
3 Tablespoons fish sauce
1 fresh chili, sliced
7 oz. firm tofu, cut into 1 inch squares, 1/4 inch thick
Salt and pepper for seasoning
Directions
Heat a large pot over low heat; add sesame oil and next 3 ingredients. Combine well and infuse the flavors to the oil for 3 to 5 minutes. Increase heat to high; add beef and season with pinch of salt and pepper. Stir-fry for a couple minutes then add water. Bring to boil then add radish, bring to boil again. Season with fish sauce, hard boil for 5 minutes. Add chili, tofu and more salt and pepper for your taste. Bring back to boil then remove from heat. Serve warm, with warm rice if you would love to.
