1kg thịt heo xay
750g tôm lột vỏ, móc chỉ lưng
300g khoai môn
300g cà rốt
200g hành tây
150g hành lá
2 bịch bánh gói chả giò hiệu Wei Chuan
1/2 muỗng cà phê muối
1 mcf tiêu
1 Lít dầu ăn
1 mcf bột mì + 2 muỗng canh nước
Cách làm:
– Rửa sạch mọi rau củ
– Cắt bào sợi
– Sấy cho ráo mặt các sợi
– Cách trộn và chia nhân nhanh và đêu
– Gói cách nào để bìa gói ít nhất là 3 lớp.
– Dán mí kỹ
– Chiên chảo thường nhiều dầu, dầu sôi mới bỏ chả. Deep Fryer thì 350-375 độ F. IP chọn saute, more

Korean Napa Cabbage Kimchi Ingredients:

Salted Cabbage:
3 cups Kosher or flake sea salt
3 Large size Napa Cabbages, about 10 lb, quartered
24 cups Room temperature water

Kimchi Paste:
2 1/4 cup water
4 oz. Dried pollack (approximately 1/4 cup)
1 Sheet of 5”x 5” Dried seaweed ASA Konbu or Dashima
1 Dried shiitake
1/4 cup Sweet rice flour
1 1/4 cup Good quality fish sauce
3 Tbs. Korean salted shrimp (Saewoo-Jeot. You can substitute to Thai fermented shrimp paste)
1 Tbs. Sugar
1 Tbs. Sea salt
25 Garlic cloves (approximately 2/3 cup)
1 Thumb size ginger, sliced (approximately 1 1/2 Tbs.)
1/2 Onion, quartered (approximately 1cup)
1 Apple, quartered & seeded (approximately 1 1/2 cup)
3 to 5 Red chili, roughly sliced (approximately 1 1/2 cup)
3 cups Gochugaru, Korean red pepper flakes

Kimchi Filling Vegetagles:
1 Medium size Korean radish, thinly julienne (approximately 8 cups)
6 to 8 Green onions, cut in halves lengthwise then cut into 1” long pieces (approximately 2 1/2 cup)

Optional choices of Vegetables (You can add these in this recipe or skip it):
1 bunch of Korean mustard, cut into 1” long pieces (approximately 4 cups)
1 bunch Water parsley(water celery Minari), cut into 1” long pieces (approximately 2 cups)
1 bunch Garlic chive, cut into 1” long pieces (approximately 2 cups)

Special Tool:
1 to 2 Plastic cookie carry bags
Large container with lid

Here the method of preparation of the Snake Gourd Carrot Soup is given
Ingredients
Snake gourd 200 gms peeled and cut into pieces
Carrot 100 gms cut into pieces
1 Spoon of Pepper powder
1 Spoon of Fennel powder
Salt to taste
400 ml of water
25 gms of garlic cut into pieces
25 Shallots cut into pieces
10 ml of oil
Preparation
Heat a pan and pour in 10 ml of oil. Put in the shallots and garlic and saute till golden brown. Add the snake gourd pieces and saute. Then add the carrot pieces and saute .Then add the fennel powder and the pepper powder and saute .Add salt to taste and mix the whole mixture thoroughly. Add 400 ml of water. Let the mixture boil and cook for 15 minutes .Take off the flame and serve after 15 minutes.

Instant Pot Rice : The Easy Way To Cook a Perfect Rice

자포니카 쌀(japonica-)은 쌀의 품종 중 하나의 명칭으로,
모양새가 둥글고 굵은 단중립형 쌀로 분류된다. 자포니카 쌀은 한반도, 일본, 중국 북부에서만 주로 소비가 되며,
전 세계에서 생산되는 쌀 중 10% 가량이 자포니카 쌀이다. 나머지 90%는 인디카 쌀이다.

자포니카 쌀은 다른 주요 쌀 품종인 인디카(indica-)에 비해 짧고 둥글다.
쌀은 기본적으로 90%이상 전분으로 구성되는데, 자포니카 종은 전분 중 아미로스라는 성분이 인디카에 비해 낮기 때문에
인디카에 비해 더 찰지며, 윤기가 더 난다. 무게는 품종에 따라 다소 차이는 존재하나,

Japonica rice is extensively cultivated and consumed in China, Japan, Korea,

Japonica rice grains are rounder, thicker, and harder, compared to longer, thinner, and fluffier Indica rice grains.
Japonica rice is also stickier due to the higher content of amylopectin,
whereas Indica rice starch consists of less amylopectin and more amylose.

Mak Kimchi (Makes 3 gallon, cuz that’s how much I need!)
Ingredients

For the Cabbage
6 lb napa cabbage
3 cups Korean kimchi sea salt or flaky sea salt
3 cup water

For the Kimchi Paste
3 cups water
4 oz dired pollack
2 sheets of palm size dried kelp
1/4 cup sweet rice flour
3 cups gochugaru, Korean red pepper flakes
1 cup good quality fish sauce
3 tbsp saewoojeot, Korean slated & fermented shrimp (you can substitute to fermented shrimp paste)
1/4 cup maesilaeg, Korean preserved plum extract (you can substitute to apple or apricot jam)
18 to 24 garlic cloves, chopped
1 tbsp chopped ginger
3 tbsp sugar
1 1/2 tbsp salt

For the Filling Vegetables
2 lb Korean radish, julienne
8 to 10 green onions, cut in halves lengthwise if it’s thick then cut into 1-inch long pieces
1 bunch of Korean mustard, cut into 1-inch long pieces (approximately 4 cups)
1 bunch Korean or garlic chives cut into 1-inch long pieces (approximately 2 cups)

Trust me, you’ll be amazed, as I was, at how good this ice cream is given how easy and quick it is to make! Now every time good sweet mango goes on sale I buy a whole bunch and freeze them just for this occasion! Just one note: mango makes up a very large proportion of this recipe so it’s really important that you use good, ripe mango for this! Enjoy!
