I am a full time working mom, and Isabelle has a lot of allergy issues. With the limited amount of time that I have, I tried to come up with recipe that is quick and easy to keep her safe and healthy.
All it really takes is for you to say the word “bourbon” and my ears perk up like a dog being asked if he wants to catch a frisbee. So when I received a copy of Michelle Fagone’s (aka CaveGirl Cuisine) new cookbook “I Love My Instant Pot Cookbook” and came across her Bourbon Barbecue Recipe, I KNEW I had to make it!
This one is CRAZY EASY and makes your chicken SO tender and fall-off-the-bone, not to mention has a sauce that is to die for. It’s like that perfect barbecue chicken but taken up a notch and it’s officially one of my favorite dishes! PERFECT for any gathering, game day or grill-less barbecue!

Nice simple recipe for BBQ pulled chicken. Had a craving all day for this and it took 25 minutes to make start to finish.
We are just having fun and using what is around the kitchen at the time. It tastes great to us. That’s all that matters.

Ingredients
4 lbs – Country Style Ribs
1 large onion, diced
3-4 cloves garlic, minced or pressed (or coordinating amount from jar)
RUB
2 tablespoons smoked paprika
2 tablespoons brown sugar
1.5 tablespoons chili powder
1 teaspoon kosher salt
SAUCE
1/2 teaspoon black pepper
1/2 cups ketchup
1 cup BBQ Sauce
3 tablespoons brown sugar
3 tablespoons Worcestershire sauce
3 tablespoons apple cider vinegar
1 teaspoon dry mustard
3/4 teaspoons kosher salt
1 tablespoon vegetable or olive oil
Instructions
Line a large baking sheet with foil and lay ribs on it
Combine all rub ingredients and massage into both sides of meat using your hands. Set aside.
In a mixing bowl, whisk together ketchup, BBQ sauce, brown sugar, Worcestershire sauce, apple cider vinegar, mustard powder and salt. Heat pressure cooker to saute function and add oil and onion. Saute for 3-4 minutes, until soft. Add garlic and cook for another 30 seconds, stirring often. Add the BBQ mixture and stir to combine. Add a few ribs at a time and use tongs to gently coat them in sauce.
Secure lid on pressure cooker and set to high pressure for 40 minutes cook time.
When finished, let naturally release pressure for 15 minutes. Manually release any remaining pressure and then open pot. Place ribs on platter and coat with sauce (see below).
SAUCE
Once ribs are removed, turn pressure cooker back to saute mode and let sauce boil for 10 minutes. It should thicken up and make a nice sauce for ribs.
