All it really takes is for you to say the word “bourbon” and my ears perk up like a dog being asked if he wants to catch a frisbee. So when I received a copy of Michelle Fagone’s (aka CaveGirl Cuisine) new cookbook “I Love My Instant Pot Cookbook” and came across her Bourbon Barbecue Recipe, I KNEW I had to make it!
This one is CRAZY EASY and makes your chicken SO tender and fall-off-the-bone, not to mention has a sauce that is to die for. It’s like that perfect barbecue chicken but taken up a notch and it’s officially one of my favorite dishes! PERFECT for any gathering, game day or grill-less barbecue!

can this be donewith chicken boneless chicken thighs? If so is there any tweeking needed? Would you still use 3lbs? and would the time stay the same?

I made this today for lunch! The family gave it a 10 out of 10 (baby back rib good!). 🙂 I did add more sauce when it was finished and pop it under the broiler.
hours later… I asked if anyone would mind if I made chicken thighs the same way for dinner… (too much DELICIOUS BBQ chicken in one day!?). Turns out… there is no such thing as TOO much delicious bbq in one day.

Awesome video, I ordered the book before I even watched the video! I think I might be tempted to slide them under the broiler for a couple of minutes to put a little caramelization across the skin.after brushing them with the sauce. Can't wait to make these. Thank you!
