Pulled Pork in the 6 QT Power pressure cooker.
Cooking time on hi, 60 minutes. Release pressure about 10 minutes after done.
Ingredients as follows.
2.5 pound boneless pork roast. Cut up.
2 cups water or chicken stock your choice.
2 tablespoons apple cider vinegar.
1 teaspoon liquid smoke.
in 6 qt power pressure cooker add pork roast cut up in large pieces.
brown the meat. Then add all ingredients.
set timer on hi for 60 minutes.
When done drain liquids and add BBQ sauce of your choice, or none at all! It’s that good!

Everyone loves a good potato salad on a hot summer day! If you haven’t made it for awhile, this is a new recipe you NEED to try!
We all know how important the main dish is when having a barbecue -but the side dishes are just as important!
We had this potato salad for almost every BBQ growing up. It’s a classic and easy to make! And if you have an Instant Pot, it becomes even easier!
If you are having a party in your backyard, this classic potato salad will be a huge hit with all of your guests! Even my kids will eat it!

INGREDIENTS
8 potatoes, cooked and diced into bite size pieces
8 eggs, hard boiled
3/4 cup dill or sweet pickles, diced
1 cup mayo or Miracle Whip
2 to 3 Tablespoons yellow mustard
1 Tablespoon sugar
1 teaspoon white vinegar (or pickle juice)
Salt and Pepper to taste
Salad supreme seasoning, optional to sprinkle on top
STOVE TOP DIRECTIONS:
Bring two pots of water to a boil. In one pot boil your potatoes for about 15 minutes, or until fork can easily pierce through the potato. Drain water off of potatoes and let them cool. In the other pot boil your eggs for 15 minutes. When they are done, drain and rinse them under cold water. Put in fridge or ice bath to cool.
INSTANT POT DIRECTIONS:
Cut your potatoes into bite sized pieces and put it in the bottom of your Instant pot. Place your eggs right on top of your potatoes.
Close the lid and turn knob to Sealing. Push the manual button (or pressure cook button) and cook for 6 minutes.
3. Move the knob over to venting (or quick release). Drain the potatoes. Place Eggs in an ice bath for at least 5 minutes.
REST OF THE DIRECTIONS:
Once eggs and potatoes are done cooling, put your potatoes, and pickles in a big bowl. Dice the eggs and add it to the bowl.
SAUCE DIRECTIONS
In a separate bowl mix your mayo, mustard, sugar, vinegar all together. Pour your sauce over the potatoes in the big bowl and mix. Add salt and pepper to taste. If it is dry, you can add more mayo to get it the texture you like. Top with salad supreme. Can also save a few hardboiled eggs to slice and add it to the top.
