Shoyu Ramen
Ingredients

For the Broth (Makes 8 to 10 servings)
6 lb pork neck bones
2 oz ginger, sliced
2 bulbs garlic, cut into halves
1 large leek, cut into half and wash every layers really well then drain
1 1/2 oz kombu, dried kelp
1 1/2 Tbsp chicken stock powder
24 cups cold water

For the Chashu (Makes 8 to 10 servings)
2 lb pork belly or pork butt

For the Tare (Sauce) (Makes 8 to 10 servings)
1 1/2 cup soy sauce
3/4 cup sake
3/4 cup mirin
ginger, sliced
1 clove garlic, crushed

For the Ramen Bowl (Makes 1 serving with below ingredients)
3 oz bean sprouts
1 portion of fresh, frozen (5 oz each) or dried (3 oz each) ramen noodles
2 green onions, chopped
1 soft boiled egg, cut into half
1 garlic cloves

I see a lot of people new to the keto diet wondering on Facebook what they can order in a Chinese restaurant. The answer is dispointing: ALMOST NOTHING! Everything has wheat, rice, or sugar in it. Here’s one of my go-to recipes for when I’ve got a hankering for Chinese take-out. You’re just not going to believe how easy it is–and how fast in the Instant Pot. Don’t have one? Just do it in a wok or on the stove top. Once you add the ingredients for the sauce, cover and simmer for about 20 minutes or until the chicken is done and tender. Super Simple Fried rice in an Instant Pot

Ingredients and direction:
Add 2 cups Rice (washed)
Add 1 ¼ cup Water
Add 1 cup Frozen Mix Vegetables
Add 1tbsp Dark Soy Sauce
Add salt as per the taste
½ tsp Paprika
1 tbsp Ginger and Garlic paste
Mix it everything
Add 1 tbsp Sesame Oil
Close the lid and turn the knob to sealing position
Press the pressure cook button and set the time manually for 8 minutes
Quick release the pressure after 5 minutes of Natural release
Let’s take look
Looks delicious
Garnish with Scallion

Thai Chicken / Tofu Coconut Soup in the Instant Pot

Ingredients
8 Kaffir Lime Leaves
2 Tablespoons Lemongrass
1 Chili Pepper
2 slices of Ginger
2 Cups Mushrooms, cut into 1/4 or sliced
3 Cups Tomatoes, cut into 1/4
1 Onion, cut into 1/4
2 Chicken breasts, cut into 1″ slices OR 1 Cup Firm Tofu
1 Tablespoon white Sugar
2 Tablespoons Fish Sauce
3 Cups Coconut Milk (I find the Aroy-D brand is the best! Can find this one in any grocery store, even Walmart)
3 Tablespoons Lemon juice (after soup is cooked to avoid curdling)

Directions

1. Place Kaffir Lime Leaves, Lemongrass, Chili Pepper, and Ginger into empty loose leaf tea bag (pouch). This pouch will be removed from soup when soup is done cooking.
2. Open the lid and add in Vegetables: Tomatoes, Mushrooms, and Onion into the liner.
3. Add, Chicken/Tofu, Sugar, Fish Sauce, Coconut Milk and pouch.
4. Close lid, Set Manual for 5 minutes.
5. When done, do a quick release AFTER 5 minutes.
6. Add Lemon Juice to soup before serving.
