Hi! Great to see you out here. In this video I’m going to share with you on of my favorite cooking health gadgets. I’m going to cook a couple of my favorite recipes that are so much easier to make with the Instant Pot. Along with cooking, I’m going to introduce you to the meal from a Chinese Nutritional Therapy approach and how this meal supports your health.

I just started using the Instant Pot last year, and I love it. I got the 10 in 1 Instant Pot because I thought I would want the greater flexibility. Today, I can’t say that I’ve used anything besides the pressure cooker. The pressure cooker functionality is AMAZING!

Playing around with the Instant Pot, I found I could make Adobo Chicken. Adobo Chicken was a recipe that my Grandfather and mother took 5 to 8 hours to cook!

Who has that time????

With the Instant Pot, I was able to reduce the cook time to 20 minutes. In this video, I was a little light on the vinegar…Go heavier because it is the vinegar which really makes the adobo.

The second thing I started making with the Instant Pot was rice because it took ONLY 4 MINUTES TO COOK RICE! I share with you my super secret Saffron Jasmine Rice recipes – a favorite with kids and adults!

This gadget is one gadget that I just loved. It has saved me a boat load of time, is super flexible, and allows me to eat home with ease.

In this easy cooking video, I cook some pork chops and sweet potatoes, or yams, in my Instant Pot Ultra 60 electric pressure cooker. The ingredients I used are pork chops, sweet potatoes, 1 cup of Mr. Yoshida’s Original Sweet Teriyaki Sauce, salt, and seasoned pepper. The cooking time was 25 minutes on the pressure cook setting.

Perfectly cooked noodles with no leftover water — cook your noodles and veg together for this no-sauce IP recipe.

While this is completely flexible, I’ve listed below the ingredients I’ve used in this particular version of the dish.

3 oz pasta
3/2 c. water

Spices used in this version (season as you prefer)
2 t. soy sauce
1/16 t. garlic powder
A few shakes of ginger
Sprinkling of hot peppers
Sprinkling of smoked paprika
Sprinkling of turmeric

Veggies used in this version (use those you prefer)
1/4 c. sliced onions
2 sliced mushrooms

Additional veggies not cooked in IP (because they will overcook in 7 minutes)
6 oz. frozen broccoli, well thawed out or steamed

Additional Optional Topping
Peanut butter powder

1. Put water and pasta in the Instant Pot (break up the pasta so it all fits laying down)
2. Poke the noodles down into the water a little – they don’t have to be completely submerged
3. Add desired seasoning
4. Add desired veggies – but not broccoli
5. Set the IP to 7 minutes manual
6. Quick release the pressure (not natural release)
7. Stir and serve over broccoli
8. Stir in some peanut butter powder if you want to

When I was in Mexico, I ate Chicken Tortilla Soup more than once.  In fact, I love the stuff so much that I didn’t even care that it was 95 degrees outside!

The thing about Chicken Tortilla soup is that, like Pasta Fagioli, it’s very different depending on the person who makes it.  Some are super tomatoey while others are more chicken soup based.  Some also like to incorporate beans and corn (but I didn’t use those in mine – I’ll save that for chili).

I decided to balance mine out by making it more chicken-packed with a hint of tomato but also adding a light touch of creaminess to the mix.

The soup couldn’t be easier to make thanks to the Instant Pot, is delightfully zesty in flavor, on the healthier/lower-sodium side and is truly the Mexican version of the classic Chicken Noodle Soup we all know and love!

11 MINUTE PAK CHAM GAI FAN/CHINESE-STYLE STEAMED CHICKEN RICE (INSTANT POT RECIPE)

This dish is a favourite from Southern China. Eaten in places such as Hong Kong, Guangdong, to Malaysia and Singapore, this is healthy and simple way to eat delicious chicken! My version is a simplified adapted recipe for the Instant Pot (find out more here: https://www.youtube.com/watch?v=BtizQP_JoFY).

– 2 x Spring onion
– 6 garlic cloves
– 1 inch of ginger
– 150g of mushrooms
– 3 cups of rice
– 3.5 cups of cold water
– 2 legs of chicken
– 3 x star anise

Marinade for chicken
– 2 tbsp soy sauce
– 2 tbsp ketchup manis/dark soy sauce
– 1 tbsp sesame oil
– 1 tbsp shoaxing wine/sherry
– 1 tsp salt
– 1 tsp white pepper

1) Marinade your chicken in 2 tablespoons soy sauce, 2 tablespoons of ketchup manis or dark soy sauce, 1 tablespoon of sesame oil, 1 tablespoon of shoaxing wine, 1 teaspoon of salt, and 1 teaspoon of white pepper. Leave for 10-15 minutes.

2) In the mean time, cut 2 spring onions in to 1-inch slices.

3) Use the back of the knife to crush and de-skin 6 cloves of garlic, then chop them in to small pieces.

4) De-skin the ginger with a small teaspoon by scraping off the skin. Slice the ginger in to thin strips.

5) Slice the mushrooms.

6) Put 3 cups of rice in to the Instant Pot’s steel inner pot.

7) Wash the rice 2-3 times in cold water.

8) Add 3.5 cups of cold water to the rice.

9) Place the steel pot in to the Instant Pot. Place a metal rack with legs inside. You can normally get these from Chinese supermarkets in the kitchen utensil section. Then place the metal rack that comes with the Instant Pot on top of that.

10) Put the chicken, ginger, garlic, spring onions, mushroom, and 3 star anise on top of the two metal racks. Ensure the steam release handle is placed securely on the metal screw, and switch it to ‘Sealing’ mode.

11) Put the lid on, and screw clockwise to close.

12) On the Instant Pot user interface, use manual settings, ensure it is cooking on high pressure, for 11 minutes.

13) When it makes a beeping noise for a few seconds, and the display shows L000, this means it has finished cooking. Press the red Cancel button. The display should change to ‘Off’. Then switch off at the mains.

14) At the top of the Instant Pot, turn the steam release handle to ‘Venting’. Be careful not to face directly over the handle or get your hand in the way of it as the steam will be VERY hot and dangerous.

15) Our chicken rice is now cooked! Plate up and serve! I served mine with a bit of extra sesame oil, some thin slices of cucumber, sesame seeds, chilli sauce and ketchup manis. Enjoy!

Chinese New Year Cake(年糕) in the Instant Pot – Instant Pot New Years Cake – Instant Pot Chinese dessert

Ingredients:
1.5 cups Glutinous Rice Flour (sweet rice flour)
1/2 cup Wheat Starch
3/4 cups Brown Sugar
1/4 cups White Sugar
3/4 cups Water, cold

Directions:
1. Combine dry ingredients
2. Add water to dry ingredients and mix.
3. Pour batter into foil tray (spray/thinly coat pan with oil first).
4. Open lid, place trivet and 2 cups of water, then tray of batter.
5. Close lid. Select Steam for 30 minutes
6. When done, quick release.

1.In a large bow, marinate the chicken by adding turmeric, salt, red chili powder, coriander powder, cumin powder and 1 tablespoon of ginger-garlic paste.Pour in 2/3 tablespoons of oil.Mix them well and let it marinate for 30 mins.
2.Turn on the IP and switch to “Sauté” Mode. Add 2/3 tablespoons of Oil to the liner, and add onions.
3.Add ginger garlic paste, and add some turmeric powder and saute.
4.Add mint leaves and mix well.
5.Add green chilies, poppy seeds powder, cashew powder and mix it well and let it saute.
6.Add tomatoes and mix well
7.Next add the marinated chicken and let it sauté for around 5 mins.
8.Add half a cup of water. (This helps the pressure to build in the next step)
9.In Manual mode, set the timer to 10 mins, and whistle to sealing mode.
10.Do a quick release and check if the chicken is well cooked.
11.Switch to Saute mode, add garam masala, and let it simmer for a few more minutes.You will notice the oil separate from the gravy.Turn off the IP.
12.Add chopped coriander and serve hot!

Goes well with rice, rotis and naans!
Serves 4 Adults.

Recipe for Korean-Fusion Style Burritos
Makes 6-10 servings. Recipe time: 1 hour (not including burrito assembly).

Ingredients for kalbi-inspired shredded beef:
• 1-2 kg braising or stewing beef in large chunks
• ½ cup rice wine
• ½ cup soy sauce
• 1 Asian pear, grated
• 5 tablespoons sugar
• ½ large white or sweet onion, grated
• 6 cloves garlic, finely minced
• 2 tablespoons sesame oil
• 2-3 green onions, chopped

Ingredients for burritos:
• 6-10 large burrito-sized tortillas
• 3-5 cups prepared white or brown rice (approx. ½ cup or more prepared rice per burrito)
• 1-2 cups seasoned rice vinegar (or plain rice vinegar with 2 tablespoons each of sugar and salt whisked in per ½ cup vinegar)
• Chopped kimchi (approx. ½ cup or more per burrito, to taste)
• Chopped raw cabbage or other greens
• Chopped cilantro
• Chopped green onions
• Sriracha (optional)

Mix all ingredients so that the meat is well-coated (this may be done inside the Instant Pot to minimize dirty dishes).
Place the beef in the Instant Pot, and pour in remaining mixture on top. Close Instant Pot lid firmly, and select the Meat/Stew function with the High Pressure option for 50 minutes.
While the meat cooks, cook your rice in a second Instant Pot, rice cooker, or on the stove (you can also wait until the meat is done and cook it in the Instant Pot your beef is currently cooking in, though you’ll have to wash the pot in between – if you do this, recipe will take an additional 20 minutes, approximately). When rice is cooked, allow to cool slightly, and sprinkle with ½ cup seasoned rice vinegar per cup of prepared rice before mixing gently to distribute the vinegar evenly.
Chop kimchi, raw cabbage or other greens, cilantro, and green onions.
When the Instant Pot is finished cooking, remove the beef to a clean bowl. Meat should fall apart easily – shred it using two forks before serving.
Allow each diner to assemble their burrito to their own tastes.
(The liquid left in your Instant Pot will be highly flavourful, and can be used as a great beef soup base after straining out any remaining solids and skimming off the fat.)
