When I was in Mexico, I ate Chicken Tortilla Soup more than once.  In fact, I love the stuff so much that I didn’t even care that it was 95 degrees outside!

The thing about Chicken Tortilla soup is that, like Pasta Fagioli, it’s very different depending on the person who makes it.  Some are super tomatoey while others are more chicken soup based.  Some also like to incorporate beans and corn (but I didn’t use those in mine – I’ll save that for chili).

I decided to balance mine out by making it more chicken-packed with a hint of tomato but also adding a light touch of creaminess to the mix.

The soup couldn’t be easier to make thanks to the Instant Pot, is delightfully zesty in flavor, on the healthier/lower-sodium side and is truly the Mexican version of the classic Chicken Noodle Soup we all know and love!

I got an instantpot and ignored it for almost a year (I was intimidated and "can't" cook.) Well, boy howdy I sure can cook now.     I just got an instant pot, and the first thing I'm making tonite is tortilla soup. x_x
    I had no idea about the saute function, lol! Did it all in a pan and then dumped it all in the pot.

    Love your site, wit and delicious recipes. I picked up a tip on someone else’s site (I can’t remember who🥴). Anyway, this tip is awesome for stirring the instant pot. Use a large binder clip to hold liner to outer side of the pot. It works great🙃

    I have made this 3 times and this last time I added 3 good size chicken breasts, we like a lot of chicken in it. I sliced them in half lengthwise just to make sure they cooked all the way through, they were perfect! I also added a can of black beans. We love this recipe!

    I made this today and doubled the jalapenos (4), doubled the hot sauce (4T), and used ranch dressing in place of the sour cream (I used what was in the fridge). It is the BOMB…and almost spicy enough. Thank you Jeffrey.

    My favorite new kitchen appliance.>>>ur2.pl/1046 Between this and my air fryer you practically can cook everything. I love that you can sear meat and then pressure cook it rather that dirty another pan searing and adding to a crock pot. I have already given out many as gifts. It’s the perfect wedding, new baby, and off to college gift!
