In today’s video I am going to be sharing a whole30 approved Zuppa Toscana. I cooked up this recipe using my Instant Pot. This recipe is healthy and packed with tons of flavor. I like to make a big pot of this and eat off it for several days.
INSTANT POT ZUPPA TOSCANA:
-1 pound Italian sausage
-1/2 teaspoons crushed red pepper flakes
7 small red potatoes, diced into bite-sized pieces
1 medium yellow onion diced
4 cloves of garlic minced
6 cups chicken stock
5 cups of chopped up kale
1/2 can of coconut milk
Salt and pepper to taste
garlic powder to taste
*optional: bacon or turkey bacon, and fresh parsley
INSTANT POT INSTRUCTIONS
-Press the ‘Saute’ button, and add the olive oil. When the pot is hot, add the ground sausage and brown it until no longer pink, about 3 minutes.
-Add onion and garlic and saute for another 3 minutes. Add vegetable stock , red potatoes, and seasonings. push potatoes into liquid.
-Lock the lid and turn the valve to ‘Sealing’. Press the ‘Manual’ or ‘Pressure Cook’ button and adjust for 10 minutes, pressure set to ‘High’. When the cook time is over, turn off the Instant Pot by pressing the ‘Turn Off’ button. Carefully quick release the pressure turning the valve to releasing.
-Once the steam is completely gone and the metal pin on the lid drops, carefully open the lid. Serve in soup bowls and top with bacon and chopped up parsley for some good presentation 🙂

Join me in the kitchen once again to prepare this tasty Thai dish using the awesomeness of an Instant Pot. Very quick to make, and the flavours are outstanding. See ingredients list below.
GREEN MANGO SALAD INGREDIENTS:
1 large green mango
1 medium onion, diced fine
1 red bell pepper julienne cut
2 tbsp of sugar
1 cup of crushed peanuts and cashews
1 lime’s juice
3 hot Thai chillies (or Asian Chilli Paste)
RICE INGREDIENTS:
2 cups of Thai Jasmine Rice
2 cups of cold water
1 tsp salt
1 tbsp olive oil
(This is for rice cooker only. Stove top,
use 2.25-2.5 cups of water)
CURRY INGREDIENTS
650g (1.5lbs) chicken breast
3 tbsp of Red curry paste
2 medium onions
Juice from 1 lime
10-12 Thai basil leaves
3-5 lime leaves
2 carrots
1-2 bell peppers
1 can of full fat coconut milk
1 can of bamboo shoots

If you ask me to pick a bird to prepare for dinner, I’m always going to choose duck. Trust me: You have not lived until you’ve experienced the pleasures of fatty, crispy duck skin giving way to perfectly cooked flavorful meat. Duck, whether roasted, braised, or shredded in stir-fries, has been a favorite of mine since childhood. It was a special-occasion food; it would make welcome appearances at birthday dinners, holiday suppers, and Chinese New Year celebrations.
Thankfully, as an adult, I no longer have to wait weeks on end for my mom to bust out my favorite bird. I’m a big girl (a.k.a. old lady) now, so I can make it myself—and in an Instant Pot, no less! Of course, no electric pressure cooker has the ability to crisp up duck skin like I want, so a skillet is still needed to finish the recipe for this hearty, flavor-packed Orange Duck. But with an Instant Pot, I can make deliciously tender duck legs in just a fraction of the usual time. And you can, too!
Best of all, this Orange Duck + Gravy is a perfect make-ahead recipe; just crisp up the cooked duck legs and reheat the gravy when you’re ready to serve!
Serves 4
Ingredients:
Diamond Crystal brand kosher salt
½ teaspoon herbes de Provence
¼ teaspoon freshly ground black pepper
4 duck legs
2 tablespoons ghee, duck fat, or avocado oil, divided
1 medium yellow onion, diced
1 medium celery rib, diced
1 large carrot, diced
8 garlic cloves, peeled and smashed
1 tablespoon tomato paste
½ cup bone broth or chicken stock
1 medium navel orange
2 tablespoons coarsely chopped Italian parsley
1 dried bay leaf
1 fresh thyme sprig
