why do you always lay out your tacos with two corn tortillas slightly overlapping? Instead of two separate tacos?

Pastor tacos have to be off the trompo and the pineapple on top. Other wise they are pastor flavored tacos but not quite the real thing

For some reason a lot of shops in Colorado call their tacos "al pastor" but they don't have pineapple.
Every summer I start making this dish from your recipe it’s a hit all my friends and fam love it. At first some say why are u mixing pineapple and pork but when they eat it they say wow it’s good.
