I’m sorry dude, that doesn’t look right at all. Your seasoning looks right, but the preparation looks all gristly and wrong. Need more char, less fat, just not right.

Rick, this is a wonderful recipe. I will definitely have to try. My wife and I must have been born Mexican in a previous life. I love all your recipes. They capture what I believe to be the essence of Mexican food. I especially love your approach to making the food and the ease with which you explain the steps. Subscribed!

I have learned so many techniques from your books and shows. Thanks for sharing with such great focus on the details that are the difference in “all” recipes. Thank you, I look forward to eating at one of your restaurants one day – definitely on my bucket list!

That is an AWESOME meat mallet, I only have one of those square wood/metal things and they aren't as heavy (or has nice and antique looking!).

Where did you get it and where could we buy one?

I saw you win a celebrity chef show with mole negro. I'm from Puebla, and our mole is also well known, lol. Seriously, I appreciate when someone from another country enjoys out food and culture. Mexico is beautiful and we love those who see it. I don't want people to be afraid of visiting and enjoying their stay.
