    Hi Caitlin! I have no intentions of being rude, but I recall you saying you grew up vegetarian, so I'm just curious: when you say something tastes or a texture resembles meat, how do you know? Do you taste test your recipes with meat eater friends? I'm asking because I have to cook for a bunch of picky eaters and I would like to adjust our meals to be vegan, without them noticing. Thank you for your videos and I hope you'll see this and answer!

    I'm going to try to see if I can figure out how to use the seitan in my refrigerator for the chicken noodle soup recipe! Also great tip about the potato soup getting thicker as it cools!! I made a batch of potato soup a couple of weeks ago and didn't take that into consideration and it was like mashed potatoes the next day. Thanks Caitlin!

    Caitlin, I've been vegan just about a year now. A big issue for me is I HATE ALLLLLL mushrooms. Can't even look at them. What do you think could be a substitute for mushrooms as far as taste and even nutrition…. I've eaten things that mushrooms were in, but either diced so tiny i couldn't identify lol or in a creamy type soup. I loved the flavor but I just can't get past the absolute repulsion of them to even cook with them. Even the smell just grosses me out. Any suggestions would be really helpful. Thanks!
