    Growing up we called these yapping gaucho's (I don't mean that to be disrespectful in anyway, it is just what it was called as a kid. We used up our left over mashed potatoes by filling them with cheese, ham, onions, and dredging them through flour and egg, frying them up and serving them with salsa and sour cream.

    Fries would be faster and simpler and create less mess. You'd have to scale these recipes up to serve large numbers get parity. The downside to deep frying would be how much oil is used to do it.
