Growing up we called these yapping gaucho's (I don't mean that to be disrespectful in anyway, it is just what it was called as a kid. We used up our left over mashed potatoes by filling them with cheese, ham, onions, and dredging them through flour and egg, frying them up and serving them with salsa and sour cream.
I grew up eating tater cakes
The first one is what we’d do to use up leftover mashed potatoes from thanksgiving or Xmas dinner! Potato pancakes 🙂
Fries would be faster and simpler and create less mess. You'd have to scale these recipes up to serve large numbers get parity. The downside to deep frying would be how much oil is used to do it.
Cook those with lard in a cast iron pan.
