    Oops! 🤦‍♀ I miscalculated on the Taco Spaghetti. It would cost me about $1 more because I forgot to double the rotel! Still a pretty cheap and tasty meal, in my opinion! 🙂

    The tomato paste in the tube is a lifesaver!! Keep in mind it’s concentrated! My son loooooves Mexican rice and I make it in a pinch.
    1cup rice (washed and as dry as it can be, we like jasmine rice) put in a pan with a tbs of oil and stir till brown add 2 cups of water and 1 1/2 tbs of the tomato paste and about 1 tbs of bullion (I use chicken knorr) give it a GOOD stir and turn to low and simmer for about 15min and boom best easiest mex rice!

    My girls love hamburger helper. I don't even bother trying to make it from scratch. Sometimes I doctor it up, but not always. It was on sale for $1.49 a box at Safeway the other day, so I grabbed a few.

    I would love to see a video similar to this using beef substitutes. I really like impossible beef but have found simply switching it for beef doesn't always work in recipes. I know there's lots of vegan chefs on YouTube, but they're usually also doing dairy free and that's not realistic for us. I like this channel because it's realistic for my life. I use the impossible beef to cut down on red meat, we aren't vegetarian or vegan by any means 😊 I wish I could commit to that!

    Ground meats are so so versatile! I've been cooking up two pounds of beef with 1 lb of turkey and dividing it into three meals! Great to freeze and have a short cut on your next meal.

    Mindy- the ground beef and wild rice recipe has become a staple in our house since I first saw it here! I’ve found it to be a good recipe for the ‘use it up’ days having sometimes added green peppers and/or mushrooms. The first time I made it my husband went back for thirds 🤣. Thanks !
