I was taught to use left over baked potatoes. Cut to desired size, season and sautรฉ in butter to brown one side with chopped onions. After getting desired color, add chicken stock and let steam for a few minutes till tender off the heat (I use cast iron so the heat will carry over). Lot less fuss.
