    my nana used to bake me a gooey cake like no other.

    SHELTON'S GOOEY CHOCO CAKE
    ingredients / for 8 people
    250 g bitter dark chocolate 70%
    250 g butter at room temperature
    200 g of caster sugar
    4 large eggs at room temperature
    70 g of all purpose flour

    1. Preheat the oven to 180 ° C.
    2. Butter a round cake baking pan 23 to 24 cm in diameter, cover the bottom with parchment paper, butter the paper and set aside .
    3. Chop in pieces the dark chocolate and melt in double-boiler the dark chocolate, and let it cool (it should be barely warm to the touch when you will mix with the remaining ingredients).
    4. In a Stand Mixer or with an electric mixer, whisk together the butter and sugar until the mixture is creamy and the sugar is perfectly amalgamated (6min). Add the eggs one by one, beating for about a minute each time (the mixture becomes granular: this is normal.) Reduce the speed to a minimum, pour the cooled chocolate, and mix until it is incorporated . Always at the same speed (minimum), add the flour and mix until it disappears from the dough (no more!), You must obtain a thick paste, smooth and satiny.
    5. Pour the dough into the baking pan, smooth the top.
    6. Bake for about 25 to 30 minutes (it may be that the top cracks a little and the cake does not look completely cooked in the center.) The cake is ready when you plunge a knife in the heart of the heart cake and that it appears stained with a little dough.
    7. To finish
    Slide the cake (without unmolding it) onto a rack and allow it to cool. Once the cake has cooled, place it in the refrigerator for an hour or two to keep it cool and easier to unmold. Turn over the cake, remove the parchment paper and put the cake back in place on a plate. Let the cake come to room temperature before cutting and serving.

    Nana Shelton used to dust some icing sugar on my slice, and serve with a big scoop of whisked heavy cream.

    Praise God….someone who knows that grits can NOT be cooked in five minutes. That dish looks wonderful btw. I'm trying this for my man's birthday breakfast on sunday 🤗.
