    How do I know if it needs 24 hours or less? Does it depend on the cut of meat?

    Does the plastic bag need to be a special sous vid type? Never seen them..

    With sous vide, there's no need to rest the meat. The juices have stayed in place throughout the cook, and the few minutes you have it searing doesn't displace those juices. Sear it, then cut it up.
