Excellent, simple, nicely done. I like the mayo sear (no need for oil), personally, but this is not necessary. Nice crunch on the carving!

With sous vide, there's no need to rest the meat. The juices have stayed in place throughout the cook, and the few minutes you have it searing doesn't displace those juices. Sear it, then cut it up.
I've recently pulled my Sous Vide out of storage to try again. Did a London Broil the other day for 6 hours and it was amazing. Looking forward to giving this one a try next! Thanks!
