This is my Sopa de Fideo recipe. It’s a Mexican style noodle soup and it hits the spot! As with most of my recipes it is very simple to make and super yummy!
I tried your sopa de fideo recipe this past weekend and my boyfriend loved it! I paired the soup with some corn tortilla quesadillas and oh my god so good!!

We have fideos in Puerto Rico but ours isn't tomato based. Usually they use chicken and chicken broth so I wanted to see how I could make it vegan. I guess I'll try this or just experiment.

Omg seriously cannot live without fideo. It's so convenient and cheap to make. I sometimes add potatoes to make it more filling. #carbs lol.
the better than bouillon I find is way better than the traditional knorr/consome that latinos usually use.
