    Will this noodle salad keep as a meal prep or will the noodles get soggy/gummy? Regular pasta keeps well in the fridge for a couple of days. Wasn’t sure how the soba noodles would last.

    I have to note, most soba noodles sold in grocery stores are NOT 100% buckwheat and contain wheat! Make sure to check the ingredients if you’re gluten-free!

    Great tutorial and it looks really yummy. Where do you get these noodles at? I also wonder could you use these noodles to make a traditional spaghetti salad that you put the different veggies in and then usually like an Italian oil vinaigrette dressing?

    and don't forget siritaki noodles! they would work in your recipe.
    also, pre-grated ginger is available at trader joes, portioned out, along with garlic, also portioned out.
