    I am writing after just now eating the first bowl of this – it is KILLER. I used the instant pot, sauteed the veggies and sausage before adding beans and broth, and then cooked for 55 minutes on high pressure. Natural release, add spinach and simmer for a little bit to cook it. Yum!

    You could have just fished out the sausage and a spoonful or two of vegetables and beans and then emersion blend the rest. Then after that’s done, add the sausage, beans and vegetables back in.

    I hate to be contrary, but that IS a fancy crock pot, and I can't possibly believe it's 40 years old. If I want to limit the time on my crock pot, I have to plug it into this janky thing that plugs into the electric outlet and cuts off the power after a certain amount of time.

    Made it for dinner and I have to say it came out excellent! Like Glen said this has deep, complex flavors in a simple soup where nothing is browned up beforehand. I followed the recipe as presented except I put in 12 oz bulk sausage instead of the sausage links and I used chili flakes and smoked paprika in addition to the spices in the recipe. I was impressed and I'm definitely making this again.

    Has Glen ever investigated S.O.S. (blank on a shingle?) I am not familiar with this but it seems to be a country-folk staple. I believe it is ground meat in a milk gravy on toast. It is apparently a depression era recipe. Cheap, fast, and loaded with calories.

    Ooo it just got cold here, too (Tennessee) definitely dusting off the crock pot and making some soup/stew. How do you store your leftovers? I usually leave the crock pot on "Keep Warm" until it's gone.

    Every time I see beans with sausage I am reminded of the mess seen in the movie All Quiet on the Western Front, the original. In the movie the German soldiers are served white beans with sausage with hunks of really dark bread. Thanks for sharing.

    While you're waiting for the spinach to wilt, you could take some or all of the sausage out, cut them up into bite-sized pieces and brown them in a fry pan for better color, flavor and eatability.

    I don't use a slow cooker very often any more since I have an electric pressure cooker (Instant Pot), but one of the nice things about most electric pressure cookers is that they can also slow cook when you want to. As a bonus, you can brown off the meat if you need to without dirtying an extra pan.

    The crock-pot was how my dad fixed dinner after he retired and Mom was still working. That gave him all day to tinker in the garage. LOL Mom grew to regret her comment, "she would eat what he fixed", between the crock-pot and weird recipes he found in the newspaper, she ate some strange stuff.
