I'm sure this is really good with the mashed potatoes, but to make it GREAT, instead of regular mashed potatoes, serve any pork recipe with baked SWEET POTATOES! Sweet potatoes are born to go with pork. Side with any other vegetable(s) you like. A pan of corn bread and copious amounts of iced tea — pardner, that's good eatin'.

I tried doing half and half. I measured it. If you do exactly half it will dry up and get cakey…
At least in my frying pan I had to run a little heavier on the bacon grease to keep the roo moving
