Would breasts dry out more than thighs? Or are chicken thighs too rubbery for this recipe? It looks quite nice, but not like anything I’ve ever seen in Australia (I think my nephews would like it on a cold night)

I made this tonight it turned out great. I added cumin, onions and a pack of chili seasonings, garlic. I Shred a rotisserie chicken. It cut the cook time in half.

I'm pretty much making this as we speak. I'm skipping the tortilla pieces, though, and I'm gonna add onions when the olives and cheese go in. Then I'm gonna make burritos out of this, with shredded lettuce, pic de gallo and a little hot sauce, along with the sour cream👍

I’ve made this several times. I some green chiles. I also buy a small can of enchilada sauce and add most of that to prevent dryness. Top with sour cream and sliced green onions. Easy and delicious. Thank you!

Switched this up a bit to use things I already had. Used green chili enchilada sauce and chopped onions in it. Cooked it basically the same and when serving topped it with some cilantro and sour cream. it was so good!!!!
