    Hi. I so enjoy your videos. Since you use so eggplant in your cooking I thought I would share one that I like and it's easy! Eggplant Cheese Stacks. 2 eggs, 2 cups seasoned breadcrumbs, 3 medium eggplants, 1/2 olive oil, 1 1/2 marina/pasta sauce, 16 oz. parmesan cheese grated, 1 cup grate parmesan, 1 cup sliced fresh basil. Line pan/pans with either baking paper or foil. Our ovens should be set to 400 degrees. Beat eggs with 1 tablespoon water. On a large plate spread breadcrumbs. Dredge the eggplant slices in breadcrumbs and place them on the prepared baking pan. Drizzle with the olive oil. Bake 20 min. then flip and drizzle the other side with oil. Once both sides are golden brown remove from oven, top each with marina/pasta slice, then some mozzarella cheese, and some parmesan cheese on top. Return to oven so the sauce can warm and the cheeses melt. I use this as my main course sometimes if I have a lot of eggplant. You can do this same thing to zucchini.

    I am so curious how your boys go to and from school. Do they catch the bus? Do you drop them off and pick them up? Do they walk themselves? I spend about 45 minutes every day just waiting for my kids in the school pick up line. I am jealous of how much quiet time you have after lunch before they are home. 😂

    Q10 is one of my favorite handcreams. The night version used to be all purplu, that was easier to see then now the purple band. I was lucky that wgen I was in Tokyo, my hair products were on sale for 300 yen at the mega donki.

    We have a lot of different nut butter/spread here. We use it on toast or sandwiches and in baking, You can also make a sauce for like chicken with it by dilluting it with milk and add some soy sauce and something spicy. My father used to do that with peanut butter and milk. Heat it up slowly and added some Indonesian sweet ketjap and sambal.

    We love sweet chili sauce in my family. My daughter's favourite is slow cooked chicken thigh in sweet chili sauce. Served wuth rice, cucumber and it also goes great with green beans. And as it is made with the slowcooker, she van make it by herself, so she is always proud that she 'cooked' the meal.
